Milk's Favorite Cupcake!

Well its true!! Baking is one thing that I am pretty good at or so I've been told. I think it goes back to my childhood and seeing my grandma in the kitchen. I was always so fascinated with watching her cook. At the ripe age of 4, I was standing on a step stool beside her learning how to season a bird and snipping the ends off of fresh green beans.

My grandma gave me my first cook book. Fast forward 20 something years later and now I am writing my own recipes!! It's something that's fun and relaxing for me. And the Hubs certainly enjoys my hobby. I am always experimenting my newest creations on him and his co workers!

I've been on a cupcake kick for a while now....with hopes and dreams of owning my own cupcake shop one day, I am often thinking of new and creative twists on classic cupcake recipes.

Last night was my night to bring the snack to our Thursday night growth group, so I decided I wanted to try out a new cupcake recipe. I wanted to do a fall themed cupcake and I was stumped for ideas. I finally decided on a caramel apple cupcake...but then I realized I wouldn't have the time to get the ingredients needed for such a fun cupcake. Instead, I went to one of my favorite baking blogs http://www.beantownbaker.com and saw a recipe for Oreo cupcakes....ummmm yum!!! Hubs loves Oreos too so thought it would be awesome to try out.


Oreo Cupcakes - makes 24


1 stick unsalted butter, at room temperature
1 cup milk
2 tsp vanilla extract
2 1/4 cups flour, plus 2 Tbsp for the Oreo chunks
1 tsp baking powder
1/2 tsp salt
1 2/3 cup sugar
3 large egg whites, at room temperature
1 pkg Oreo Cookies (45 cookies)

Preheat over to 350F. Insert liners into a medium cupcake pan.

Twist apart 24 Oreos. Place the wafer with filling on it, filling side up, in the bottom of each paper liner. Cut other wafers in half. Save 24 halves to place in the frosting. Crush the other wafer halves, also for garnishing.

Cut the remaining Oreo cookies into quarters with a sharp knife. Toss with 2 Tbsp flour and set aside.

In a large bowl cream the butter until fluffy, about 3-5 minutes. Add the milk and vanilla and mix to combine.

In a separate bowl mix together the flour, baking powder, and salt.

Add the dry ingredients to butter mixture. Mix until integrated. Stir in sugar. With an electric mixer on low speed, beat for 30 seconds. Turn the mixer up to medium speed and beat for 2 minutes. Add the egg whites. Beat for 2 more minutes. Stir in the quartered cookies.

Fill the cupcake lines three-quarters full. Bake for about 20 minutes or until a toothpick inserted in the center of cupcakes comes out clean. Cool cupcakes in the pan.

Frosting
8 oz cream cheese at room temp
1 stick butter at room temp
1 Tbsp vanilla extract
3-4 cups powdered sugar

Cream butter and cream cheese until fluffy.

Add vanilla extract. Slowly add powdered sugar until desired consistency is reached.

Assemble the cupcakes
Once cupcakes have cooled completely, frost with cream cheese frosting. Sprinkle with crushed Oreos and place 1/2 of an Oreo on the frosting of each cupcake.

And Wa-Laa.....



They were really fun to make and a hit at group!!

Our One Year Anniversary and a Love Dare...

Its almost crazy to think that Babe and I have been married for a year!!! Our first year as newlyweds has been an incredible adventure to say the very least. And to think back on my wedding day...I did not even think it was possible to love my hubs anymore than I did at that moment when I was saying my vows to him....boy I was wrong. I have fallen in love him with over and over again in new ways since then and really feel like this still just the beginning!



So lets get to the reason for this blog....its cus I feel like it! That's it. No real purpose other than to share our good times, adventures, obstacles, hopes, dreams, and everything else in between. And if you're lucky maybe ill throw in a couple recipes here and there. But other than that its just something I've been meaning to try out for some time and now that I have the time I am going to try my absolute best to post at least once a week until next August, our 2nd year anniversary...then we will see how it goes from there! : )



Just to get you up to speed on things here's a quick rundown of the events that led up to our union: Hubs and I met at school in 2003. We fell in love. Started dating in 2004 and got married in August 2009. Our first year of marriage was absolutely amazing! We are both followers of Christ and love the Lord very much. We have Him to thank for everything!! The years since I've known hubs have been some of the best years of my life. I am so thankful and blessed to have met the perfect man that God created for me!


Okay...so now that you are up to speed on the Mr. and I. I just want to say a couple things...first off you may have already noticed that I will refer to my husband by a few different names...so u are not confused husband will be referred to as Babe, Hubs, the Mr., or B. and I will be referred to as...well I will be "I" LoL...or if I'm referring to myself in the third person for whatever reason, I will then be "J" (that's what Hubs calls me)


I'm a little behind on this blog already but I plan to bring you up to date pretty quickly. 08.29.10 officially marked our one year anniversary! The paper anniversary!! It was a great anniversary weekend for us. We were able to spend alot of time together and reflect on the past year. Okay so originally the plan was to take a luxurious 1 year anni vacay to Hawaii and well...lets just say that really wasn't in the budget. So we decided to bring the Big Island to us!! That's right we luau partied it up!! It was great because got to hang out with our awesome friends at our luau party. My mom and dad were gracious enough to let us entertain our friend in their huge backyard. Nothing like hanging out with some really great people. The people that were there with us at the beginning of our relationship and are still there for us!

To keep in theme with the "paper" anniversary...our good friend and up and coming photographer Lisa E. met up with us at our reception venue located in Chesapeake Beach, MD. right on the water and did a photoshoot with us. It was super fun!! She even posed us to look like pictures from our wedding day, so cool!! We are so lucky to have Lisa in our lives. Lisa if you are reading this...A million thank yous again!!! The pictures turned out great!!

Post photoshoot we actually had dinner at the restaurant where our reception was held. They sent us an anniversary gift in the mail for a free dinner and discount on a room at the hotel to celebrate our anniversary! ummm free food?? awesome!!! So we decided to take them up on the free dinner deal...the discount on the room...not so much. We live about 45 away, so it was no big deal for us to drive back home after spending the day there. The meal was great. I had soft shell crab for an appetizer, surf and turf (filet and lobster) for my main course, and ny style cheesecake for dessert. And Hubs who isn't a fan of seafood at all (and hes from southern Maryland and grew up on the water like me, how dare him!!) ordered the New England clam chowder for is appetizer, filet mignon for his main course and some type of apple dessert. Excellent $150 meal for free....cant beat that!!

Funny story...between our meal the manager/event coordinator (person who pretty much booked my wedding and headed the event) Mary, came over and was so thrilled to see us. She pulled up a chair and was talking to us about general stuff. Then she asked me if I had seen our pictures in so and so magazine...I was confused. I didn't know we were in a magazine...although I did know that the venue was using our photos for their advertisement materials (I had to sign papers for this). So she runs off and comes back with a wedding magazine and sure enough there we are!! She gave me the magazine to keep which was very sweet of her and invited us to come back soon. It makes me happy to know that others loved my wedding/wedding photos as much as we did. I worked a long 19 months on that wedding!!

Boy this post is much longer than expected so I will end it soon but first I have to talk about our wonderful bakery that did our wedding cake. Sugarbakers is a bakery in Baltimore and their cake is seriously some of the best I've ever tasted. Its also kinda pricey but so worth it in my opinion. So we didn't have to save the top tier of our wedding cake (so old fashioned anyways) to eat on our 1 year. You know why? Cus Sugarbakers make us a fresh top tier for free!! I will say again I am very much a fan of free stuff and especially free food. So we were very happy with that. It was really nice to work with these vendors during our wedding and can say that we made the best decisions in going with our reception venue and our bakery!!

And ohhhh I almost forgot about an important subject in this post....I bet you were wondering what kind of Love Dare I was talking about in the title...okay well I'm about to tell you. So our anniversary gift to each other was this! The Love Dare. Still saying huh?? LoL. The Love Dare is a book (continuing with the paper theme) of 365 daily Christian devotionals for husbands and wives that is designed to make our marriage stronger based on biblical principals and ends each day daring us to perform a simple act of love for each other. As of today we are on Day 52 and it has been so amazing for the both of us. I can tell that we are growing closer to each other and to God with each passing day.
